This is @stillsostrange with a strawberry rhubarb mojito, and the best cooking side effect ever: when you make rhubarb simple syrup (1 cup water, 1 cup sugar, two cups diced rhubarb, a knob of ginger, simmer for half an hour) you also end up with a cup and a half of rhubarb jam.
The recipe for the mojito, by the way, is:
Muddle together three wedges of lime and two stalks of mint. Then shake with:
1.5 oz rhubarb simple
2 oz white rum
dash rhubarb bitters
Pour over rocks (leave the mint and lime in, if you like), and add a diced strawberry, a few cubes of diced rhubarb, and club soda to fill.
